(Yicai Global) Sept. 10 -- Jason Atherton, a British chef with a handful of Michelin-starred restaurants, has overseen the opening of three new eateries in Shanghai.
The restaurants are all based at the new Shanghai Edition hotel, one of a collection opened by renowned hotelier Ian Schrager and Marriott International. They are Shanghai Tavern, Canton Disco and Japanese concept Hiya.
Shanghai Tavern is akin to Atherton’s Berners Tavern, an existing location at the Edition in London. The menu is a single page, a stark contrast to the lengthy list of options typically found at Chinese restaurants, and features British dishes such as pork pies. There are also more locally adapted dishes, such as crabmeat toast salad and meringue wrapped in pickled pork puree.
Atherton first brought his cuisine to Shanghai eight years ago, when he arrived in the city and used to trek around local markets to find fresh ingredients and figure out how to incorporate them into his food. His specialty dish, baked mac and cheese, will feature on the menus of all three restaurants.
Atherton opened his first Shanghai diner, the now closed Table No. 1, in 2010. He also runs The Commune Social, which has been particularly successful in recent years, he told Yicai Global. The chef had been in talks with Edition for two years on the Shanghai Tavern, and spent six months preparing to open the restaurant.
He is also looking beyond the Chinese market and has plans to open stores in Qater and Doha within the next two months.
Atherton’s London earnings took a big hit two years ago but he managed to get things back on track, and now holds the view that maintaining a steady business is just as important as actually making money.
